Breakfast sausage (or country sausage ) is a type of fresh pork sausage usually served at breakfast in the United States. This is a common breakfast menu in a traditional American "peasant" or "country" breakfast, since it originates as a way for farmers to make the most of their livestock (usually pigs). Pieces and ornaments are ground, seasoned and then consumed by farmers as a cheap, high protein breakfast.

It is probably most popular for home consumption in rural areas, especially in the southern states, where it is in the form of fresh or smoky bread or links (the latter may have natural or synthetic casing, or no casing of any kind). Most visitors, fast food restaurants, and family restaurants across the country will also bring one or more versions during breakfast hours, either on a sandwich, on a breakfast plate, or both; some fine dining places will also have sausage options on their breakfast or lunch menu. The range of casing links is most similar to English-style sausage and has been produced in the United States since the colonial era. This is basically a highly seasoned groundbreaker, so it is not stored and should be stored and handled appropriately. New variations made from a mixture of pork and beef and poultry can also be found. There are also vegetarian varieties that use textured vegetable protein instead of meat. In the United States, the main flavor used for seasonings is black pepper or white pepper and sage, although there are varieties that are also flavored with cayenne pepper, or even maple syrup. Some breakfast sausages spiced with salami.

The breakfast sausage is usually fried in a pan, baked, or microwaved. Some people like to put maple syrup into their breakfast sausage. Cooked breakfast sauces are also mixed into the egg casserole before baking. Destructive and added to the white sauce, it is the main component of sausage gravy.
