Almond paste is made from the same amount of almond or almond flour and sugar, with a small amount of cooking oil, shake eggs, heavy cream or corn syrup added as a binder. This is similar to marzipan . Almond paste is used as a cake stuffing, but can also be found in chocolate. In commercially produced almond paste, apricot soil or peach kernel is sometimes added to keep the cost down (also known as a tip).

Usage

Almond paste is used as cake stuffing from various cultures. This is the main ingredient of American bear bear cake. In Scandinavia, almond paste is widely used, in a variety of pastries and pastries. In Sweden (where it is known as mandelmassa) is used in biscuits, muffins, and bread and as a traditional spring pastry dish and is used in Easter and Christmas candies. In Denmark (where it is known as marcipan or mandelmasse), almond paste is used in some pastries, for example, as a traditional Danish pastry cookie kringle .

In the Netherlands, almond paste (called amandelspijs ) is used in gevulde speculaas (chocolate-flavored biscuits) and banket. It is used as a stuffing on the fruitful fruity bread Kerststol , which is usually eaten at Christmas. In Germany, almond paste is also used in cakes and candies. In German, almond paste is known as Marzipanrohmasse and is sold for example as LÃÆ'¼becker Edelmarzipan , which is "high quality marzipan from LÃÆ'¼beck".

The almond pasta is the main ingredient of French traditional cheese calisson in Aix-en-Provence. This is used as an almond filler croissant .

In Turkey, almond paste is traditionally made in Edirne, once the capital of the Ottoman Empire. During the Ottoman era of Turkish history, it was a royal pleasure mostly used in the palace. It is now sold in delightful shops in Istanbul and Edirne.
